Delicious Cottage Pie – Low in carbohydrates

Healthy CottagePie!This is a great winter warmer however not your usual cottage pie as we have substituted the potato mash for a cauliflower mash. The two main ingredients in cauliflower are disease fighters, Indole-3-Carbinol, which helps to lower estrogens in the body and Photonutrient Sulforaphane. This sweeps toxins out of your system that normally damage the cells and turn cancerous. This is a great meal for the family, try it and I bet the others do not even guess there is no potato used… delicious!Ingredients? A knob of Butter? 1 large chopped Onion? 2 medium chopped Carrots? 500g Organic Lean Beef Mince? Tin of Chopped Tomatoes? 1 large cup of Beef Stock (290ml)? 1 Bay Leaf? Fresh Thyme Leaves from 1 Sprig? 2 tbsp Tomato Puree? tsp Cinnam work at home on? Sea Salt & PepperCauliflower Mash? 1 large head of Cauliflower? 1 knob of ButterMethod- Preheat oven to Gas mark 5 190C- Gently heat the Butter in the frying pan adding the Onions and Carrots.- Once softened add the Minced Beef and cook until brown- Add the Tomatoes, Tomato Puree, Beef Stock, Bay Leaf, Thyme and Cinnamon and season well- Cover and simmer for 30 minutes.- Meanwhile, make the Mash by boiling the Cauliflower until tender. Drain the water, add the Cauliflower to a processor with the Butter. Pulse until creamy (this may take a couple of minutes). Be sure to get rid of all lumps!- Spoon the Beef mixture into an ovenproof dish and spread the Mash over the top. Dot with some Butter and bake for 30 minutes until golden brown on top.
